Rice Field Eel with XO Sauce

  1. Wash rice field eel. Remove flesh from the bone. Slice.
  2. Boil water. Add oil and Hua Diao wine. Add eel and cook until just done.
  3. Heat oil. Stir-fry sliced red chili, green chili and onion until just done.
  4. Mix Lee Kum Kee XO Sauce with red chili, green chili, onion and eel.
