Beef Fillets with Dragon Fruits & Celery

  1. Remove pulp from dragon fruit.  Dice.  Keep the shell for later use.
  2. Mix beef fillet with marinade.  Set aside.
  3. Pan-fry beef fillet until 80% done in oil.  Set aside.  Cook celery and bell pepper with a little water and sugar.  Set aside.
  4. Heat wok.  Stir-fry minced garlic in oil.  Add celery, red bell pepper and beef fillet.  Stir in dragon fruits and seasoning mix.  Dish up all ingredients into the dargon fruit shell.

Marinate beef fillet with a little water and oil to make it tender and smooth. Once adding the dragon fruits, stir-fry quickly in high heat to avoid water coming out from the fruits.
Chef Recommendation

Oyster Sauce well matches with beef. Apart from removing the gamy flavour of beef, it can bring out the umami taste of beef. Do not overuse Dark Soy Sauce or else the ingredients will be too dark in colour. This dish can be served with XO sauce, for both taste and upgrade.
